Learning about Japanese fermentation ​and
​Making miso with Aedan Fermented
​
​in Berkeley

Join the hands-on Miso (味噌) making workshop lead by Mariko Grady, the founder of Aedan (the award winning traditional Japanese fermented foods producer).
You will take home 4 pounds of baby miso that you crafted. Your baby miso will be fully mature after six months of aging at home. Also a beautifully handcrafted fermentation jar made just for this workshop (optional) is available. The high fired iron-rich clay jar gives the best environment for the baby miso, and it last for your life time. 
This workshop includes:
1) Hand crafted 4lb baby miso.
2) Stories of the traditional Japanese method of koji (麹) fermentation,
3) Tasting different kinds of misos and koji products, 
4) Hands-on workshop of learning how to make your own Miso. (We mash the freshly cooked soy beans, koji and salt together!)

1. how to make beautiful 'Japanese Tea Sweets' and
​2. the basics of the Japanese Way of Tea!

​In the first part of the workshop, Manami (wagashi pâtissier) will lead you making moist Japanese style sweets known as omogashi for tea ceremony.
​Over the centuries the omogashi have become an important cultural element of the tea ceremony for their ability to express the theme of the get-together. You will learn about the Japanese early spring motifs and how to embody them into the shape of the sweet. You can make 4 kinds of sweets and take them home!

After a short break, we will conduct a casual tea ceremony in the No-Gate Tea style. You may be serving or may be served a bowl of tea and will learn how to perform your role in the Japanese Tea Ceremony. 
The purpose of No-gate Tea is to bring tea practice to a general audience in a relaxed manner. No experience is needed for making sweets nor for the tea ceremony. Please bring an apron, but all other materials are provided. The ceremony takes place on chairs and tables.
The workshop is limited to six participants.

In this workshop, you will make a bowl using a hand-build technique.
Hand-building (as opposed to the potter’s wheel) is the most traditional way of making a Japanese tea bowl (for tea ceremony). The students will learn a coil building technique, which includes pinching and sculpting. Everyone will get to keep one or two pieces, and the firing and glazing will be done later. (All materials provided.)
This workshop is limited to 15 participants.

Make ramen noodle from scratch

 Learn about Macrobiotic diet and make  healthy ramen noodles with a tasty sauce from scratch with Shinobeau McConney! Shinobeau will teach how to make her secret sauce, which be used as broth or base for many other dishes as well.
​You will take home three of Shinobeau's recipes for toppings for the noodles (which can also be served as side dishes), and a recipe for daikon mochi cakes.

Different kinds of tea demand different brewing methods. Yufuko will explain some traditional steeping methods  and will demonstrate how to draw out the best taste of rare teas (Zairai-sencha在来煎茶, Awa-bancha阿波番茶and Pu'er tea普洱茶).

why we use the particular brewing methods and their health benefits.

In the morning, Yufuko (No Gate Tea) will help you through the steps of putting on your kimono. This part of the workshop is free and optional. A potluck lunch will follow the workshop.

Setsubun (節分) workshop
The Tea Ceremony & the Traditional Foods to Welcome Spring!


On February 3rd, the eve of the first day of spring in the traditional Japanese calendar, people scatter roasted soybeans inside and outside their homes, shouting, “Fortune in, devils out.” It is called the bean-scattering ceremony.
We will introduce you to how the Japanese cerebrate this popular seasonal festival, 節分.

Join us and enjoy serenity of the tea ceremony, fun of hands on cooking class, and take home a little wisdom and Japanese tradition

Welcome Spring with a mindfulness practice of the Japanese Way of Tea. You will enjoy the traditional treats & tea, and will learn the motifs and decorations for this special occasion.

​In the 16th Century three Japanese masters developed a special Way of Tea as a way of cultivating focus, respect and mindfulness. The Way of Tea acts these values out in a pleasant drama in which you are one of the actors. In the first part of the workshop you will learn how to be a guest in a casual tea ceremony setting and will play that role as Yufuko serves you tea. You will learn how to take the drama of appreciation and respect into your everyday life so that whether you are greeting a friend or ordering a cappuccino, you are practicing in a Japanese wisdom of mindfulness!​

Introduction to Japanese traditional foods culture in setsubun.
You will learn a ritual way of making the eho-maki (恵方巻き), a popular sushi-roll for the bean-scattering ceremony day. You will also learn how to prepare the ingredients.

Introduction to Pu-Er Tea

No Gate Tea

In the first 30 minutes of the workshop, Yufuko will serve Pu’er teas from the Yunnan province of China. Pu’er is renowned by tea connoisseurs for its unique delicate taste and refreshing palette. Good quality Pu’er ages well, just like a fine wine, and over the years develops a dark color and earthy taste. It is so valued today that there are many counterfeit Pu’ers on the market. Yufuko will show you art of brewing real Pu’er tea to bring out its virtues.
Pu’er is also famous for its health benefits. Because the tee trees grown natural environment or almost wild, and because most tea leaves are harvested from 500 – 800 years old trees the Pu’er tea contains incredible amount of minerals. Many tea drinkers treat Pu’er as a cleansing tea that reduces Cholesterol, aids in Digestion, and helps with sleep.

 Eri graduate from the Culinary Institute of America on May 2017. She bring Eastern traditional mindful eating and the appreciation to the rich California harvest together to nourish both our body and mind.

The second half of the workshop (2 hours) will focus on the healing qualities of food and its preparation. Since it is a holiday season, Eri will show you tips for helping digestion and detoxification through a hands-on cooking lesson and a short lecture. You will be making petit culinary delights with Eri!
Eri’s lectures and recipes are based on the ancient Eastern wisdom of traditional Chinese medical cuisine with a Japanese twist. You don’t need to use special herbs nor special techniques. Eri will describe how the principles of traditional medicine can be applied to your diet in practical and fun ways. Enjoy delicious food and take home a little wisdom from our eastern ancestors!

It is based on the ancient eastern wisdom of maintaining health by balancing energy flow – qui – and living in harmony with Mother Nature. You don’t need to use special Chinese herbs nor special techniques. Eri will introduce you to some practical ways to apply this traditional wisdom in Japanese Way to modern life in the United States. In the second part of workshop you will enjoy a small lunch that represents the Five Elements as an introduction to the Chinese Medicinal Cuisine. Eri will explain the principles of traditional medical cuisine, how they relate to individual body types, and how to apply the principles to your everyday meals. Introduction to Tea Ceremony

No Gate Tea

In the first part of the workshop you will learn how to be a guest in a casual tea ceremony setting and will play that role as Yufuko serves you tea. In the second part of the workshop you will follow step-by-step instructions to prepare a bowl of tea and serve it to your guest. You will learn how to take the drama of appreciation and respect into your everyday life so that whether you are greeting a friend or ordering a cappuccino, you are practicing in a Japanese wisdom of mindfulness.

The Discovering the Japanese Way of Tea
'Making Japanese Tea sweets' workshop

​

This will be a three hours long workshop. 
We will start with making moist Japanese style sweets known as omogashi for the tea ceremony. 
The tea sweets may be an expression of your appreciation of the season, or may be expression of a particular occasion, a memorial, or a birthday for instance. There are traditional motifs for sweets that you can copy, but you can come up with new designs. You will give a ‘poetic name’ for your own creation.
Tea sweets are presented with their poetic names to the guest. We appreciate the sweets with our five senses; sight, smell, hearing, taste, and touch. Hearing the poetic name marks an important part of the tea ceremony

We, then,will conduct a casual tea ceremony in the No-Gate Tea style.
As the host will serves thick tea on the table (and guests sit on chairs), you will practice the choreography of the tea ceremony. You will learn how to participate in a play of Japanese Way of Tea.

This workshop is open to everyone. No experience is needed.
It is good practice for all ages!

The class will be taught in Japanese and English.
